“Learn the basics of making fresh mozzarella in a hands-on class from Chef Jasper Mirabile of Jasper’s Ristorante and Marco Polo Italian Market. The class will be from 1 to 3 p.m. Saturday, Jan. 11, in the Wysong Family Culinary Theatre of the Hospitality and Culinary Academy. Cost to attend is $25; register here.
In this class, Mirabile will first talk you through the cheese making process and the history of fresh mozzarella cheese in Italy. Then the class will move into the kitchens, breaking into groups and learning how to make fresh ‘mozza’ with Mirabile’s careful instruction.
As a bonus, Mirabile will prepare a pasta dish with fresh mozzarella along with a fresh Ricotta Tart made from the ‘re-cooked whey’ of the mozzarella cheese to sample to get your creative culinary juices flowing on the many uses of this cheese. You will take home a ball of fresh mozzarella that you pulled yourself.
Mirabile’s easy do-it-yourself Mozzarella Kits and autographed cookbooks will be available for sale after the class. All proceeds will go to JCCC’s Hospitality Management Scholarship.”
